Orange Carrot Cookies by Elma Hall

1 1/2 C. shortening (or oil)
2 C. sugar
2 Eggs
2 tsp. Baking powder
1 tsp. Salt
4 C. flour
2 C. cooked carrots, mashed
2 tsp. Vanilla

Beat shortening, sugar & eggs til creamy.  Mix dry ingredients and add alternately with mashed carrots.  Add Vanilla.  Mix all together.  Drop by teaspoonful onto greased cookie sheet.  Bake at 375 degrees 8 minutes.


Icing

2 grated orange rinds
1/3 C. orange juice
2 C. powdered sugar
pinch salt


Ice cookies while hot with a pastry brush.

NOTE: Buy 2 lbs. Carrots to cook and mash
